Oatmeal: Banana and Blueberry

Episode 1 in the oatmeal series and I am going for a very obvious pairing. But, there is a reason it is so obvious. It works. I don’t really like having big chunks of banana in my oatmeal so to get round this, I completely mash it first. It really helps bring out the sweetness of the banana.

This is really the perfect breakfast. Every Saturday I do a long distance run (well, long distance for me – a warm up for others! Haha) and this recipe (and many more to come) gives me more than enough slow releasing energy.

I also used frozen blueberries for this for which I make no apology, but if you can, use fresh and as always, this is a base, add whatever you want and in this series, I will be taking you through MANY different options.

A simple, tasty, satisfying breakfast.

Blueberry Other

Serves 1

Nutritional Information:

  • Calories = 344
  • Protein = 9.1g
  • Fat = 8g
  • Saturated Fat = 2.2g
  • Carbohydrate = 54.8g
  • Cholesterol = 0g

Ingredients:

  • ½ cup of quick/porridge oats
  • ¾ cup soy milk
  • ½ cup water
  • 1 banana
  • 1/2 cup blueberries

Blueberry side

Cook it:

  1. In a bowl, mash a banana
  2. Add the oats, banana, blueberries, milk and water to a saucepan and put on a low to medium heat
  3. Using a soft spatula (or just wooden spoon if you don’t have one) keep stirring for about 5 minutes (or until the desired consistency has been reached)
  4. Serve as is or with extras
  5. Easy
  6. Get it into ya!!
